Avocado In My Brownies


My in-laws bought me this cookbook I wanted really badly for Christmas. It is called Deceptively Delicious by Jessica Seinfeld. I saw her on Oprah and knew I wanted to get the book. Anyway, tonight I made Karoline some Peanut Butter and Banana Muffins with cauliflower in them. They were SOOOOO good. I ate all the extra batter off of the bowl... oh and I used my Kitchen Aid mixer! That makes three times this year! I have got to use that thing more.
I love the idea of making normal everyday dishes, desserts, and snacks with just an added bit of extra vegetables. If you are a mom you need this cookbook. It has so many great ideas. Tomorrow morning I am going to make Karoline's normal omelet but this time I will add cauliflower to it to sneak in a little bit more nutrition. This weekend I am going to try the brownies that are made with avocado... who would have ever dreamed. Anyway, just wanted to pass on this great find. It's a must have!

Back to Reality

My mom and dad are in need of new pictures of the kids so dispite the fact that my house it turned upside down I will make time for a post since Christmas is not too far away... I want to say on their good side right!?

TJ's parents left this morning so we are back to reality at our house... thank goodness TJ got dismissed from his jury duty so he will be able to be home for breakfast and lunches as usual. We had a great time with TJ's parents and were so thankful for every minute we got to spend with them. They really enjoyed meeting their new grandson. Here are a TON of pics from the week. Anderson's First Thanksgiving on His One Month Birthday!

What an amazing year it has been and we are so thankful for God's many blessings. We are so thankful for our little girl and our baby boy. I am so amazed at how God has blessed our family. Anderson is one month old today also... I can't believe it! We had a great day but started out a little rough... I have been a little sick but got really sick last night which made the feedings not so fun (since TJ can't really help with the feedings). Then Anderson would not go back to sleep after I fed him at 7AM so TJ had to go get him and sleep on the sofa with him. TJ was finally able to put him back in his crib and then Karoline woke up at 10AM! Hearing her voice woke me up so we got off to a late start. But we had a pretty relaxing day and a wonderful meal! I also included some pictures from our day yesterday and our Thanksgiving service at church. Hope everyone had a great day and we love you all!

GiGi and PopPop Have Arrived

TJ is watching some silly show I have no interest in so I thought I would do a post before I head to bed. My mom will be happy to see some pics of the kids too. My mother-in-law, Barna, and I are going to my meal preparation place tomorrow to make some items for our thanksgiving meal and I am excited! It will be fast, easy, and I don't have to clean up the mess! Yeah! I hope everyone has a wonderful Thanksgiving!!!

Another Great Week

It has been a great week... Skip down to the pics if you have no interest in reading. Anderson is really changing more and more each day. We have had two nights of him sleeping in four hour stretches so we have dropped one of our night feedings and I LOVE it. He also smiled for the first time today (a real smile, not a gas smile). His newborn clothes don't fit very well and he is starting to fit into some of the 0-3 M stuff. He holds his head up so well and he is really strong.
Karoline is doing such an amazing job as a big sister. When she wants to hold Anderson she says "More brother, more brother" and holds her arms out. When she is done she yells "OK". It is too cute. She still calls him "brother" or "Oshey" ( SO strange). Her teething is getting a little better but she is still suffering a little. One cute thing she does is if she finds Anderson's pacifier anywhere in the house she always takes it to Anderson and tries to put it in his mouth. It is really sweet.
TJ and I actually got to go out with some friends to get dessert the other night. We went after we put Karoline to bed so that mom would only have to worry about Anderson. Well, Karoline woke up and was sitting at the end of her bed crying (she has NEVER done this before) so she and Anderson were wide awake in the livingroom with mom when we got home at 10:45 PM. Poor Gammy... it was so nice of her babysitting again... she babysat many times during her visit.
We said goodbye to my mom on Friday and we are getting ready for TJ's parents who are coming on Tuesday. I have a lot of cleaning to do. Oh, did I mention I got to go to the grocery store ALONE today!!! It was amazing!
Prayer request- ME... I am starting to get sick and I really don't want to be sick, having to do middle of the night feedings, and possibly get Karoline and Anderson sick. So please pray! Here are some pics from the week and videos. ENJOY!

We were so sad that Gammy had to leave but she will be back for Christmas. She was a BIG help in our family's transition from three to four! Karoline especially misses her "mimi"...

God Bless Gripe Water!

Oh last night was rough. Anderson has not been a spit up baby so far until late yesterday afternoon. He started spitting up in quite large amounts. Last night (I am speaking of the middle of the night feedings) he would only eat on one side and then I would change his diaper and he would spit up everything he just ate. He didn't sleep very well and he continued to spit up a lot this morning. On top of this he had HORRIBLE gas. So Anderson and I didn't go to church. When mom got home I had her go to the vitamin store to get Gripe Water. IT WORKED! He has not spit up since and he has been sleeping SO much better. He and I both got a nice long nap this afternoon. God bless the makers of Gripe Water!!

Back to the Park-Karoline was THRILLED!




Friday was such a beautiful day and when Karoline sat down for breakfast I asked her if she wanted to go see her friends at the park. She was SO excited because we have not been to the park for two weeks or so... she was so excited that she didn't eat any breakfast and just wanted to get down and go! We had a lot of fun and all our friends in our Mommy and Me group got to meet Anderson. I also took some pictures of the beautiful trees... I just love fall!
